Fig Vinaigrette

Ingredients

Makes about ¾ cup / Prep: 5 min.

  • ¼ cup fig preserves
  • 3 tablespoons fresh lime juice
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon dry mustard
  • ½ teaspoon salt
  • ½ cup olive oil

Instructions

  • Whisk together first 5 ingredients until smooth.
  • Add oil in a slow, steady stream, whisking until smooth.
  • Chill until ready to serve.
  • Store in refrigerator for up to 1 week; bring to room temperature, and whisk before serving.
