Flaky Cod and Shallot Frittata
A fluffy cod and shallot frittata with a hint of spice—a perfect breakfast or light meal!

Ingredients
- 2 cod fillets
- 6 eggs
- ½ cup milk
- 1 shallot chopped
- 2 garlic cloves minced
- Sea salt and ground black pepper to taste
- ½ teaspoon red pepper flakes crushed
Instructions
- Bring a pot of salted water to a boil.
- Boil the cod fillets for 5 minutes or until opaque.
- Flake the fish into bite-sized pieces.
- In a mixing bowl, whisk together eggs and milk.
- Stir in chopped shallots, minced garlic, sea salt, black pepper, red pepper flakes, and flaked cod.
- Pour the egg mixture into a lightly greased baking pan.
- Preheat the Air Fryer to 360°F and cook the frittata for 9 minutes, flipping it halfway through for even cooking.
- Serve warm and enjoy!
