Ingredients

  • 3 kg leg of lamb
  • 4 onions – peeled and sliced
  • 10 garlic cloves – peeled and whole
  • 4 carrots – peeled and quartered lengthways
  • 10 oz white wine
  • 10 oz stock
  • 2 tbsp Armagnac Or 2 tbsp madeira wine
  • Salt & pepper
  • 3 sprigs fresh thyme

Instructions

  • Brown lamb in saucepan
  • Drain fat
  • Combine all ingredients in crock pot except thyme
  • Cook on high for 2 hours then on low for 5-7 hours

Garnish:

  • Thyme
