Ingredients

  • 8 cherry tomatoes
  • Kosher or sea salt
  • Pinch of sugar
  • 2 drops hot sauce such as Tabasco
  • 1 small garlic clove finely chopped
  • ¼ pound soft fresh goat cheese cubed
  • Peel of 2 oranges orange part only, cut into very thin 2-inch strips
  • Storebought or homemade Black Olive Paste
  • Orange marmalade
  • teaspoon dried thyme
  • Extra-virgin olive oil

Instructions

  • Preheat the oven to 350°F.
  • Cut the top off each cherry tomato and carefully scoop out the insides.
  • In a cup, mix salt, sugar, hot sauce, and finely chopped garlic.
  • Sprinkle this mixture over the tomatoes.
  • Fill each tomato three-quarters full with cubes of soft fresh goat cheese.
  • Bake in the preheated oven for about 20 minutes or until the tomatoes have softened, and the cheese has melted.
  • Once baked, spread a small amount of black olive paste on each tomato.
  • Follow with a layer of orange marmalade over the goat cheese.
  • Sprinkle dried thyme over each tomato and drizzle with extra-virgin olive oil.
