Gourmet Gorgonzola Onion Melt
Ingredients
- 1 large sweet yellow onion
- 1½ tablespoons butter
- 4-6 oz. crumbled Gorgonzola cheese
- 4 slices sourdough bread
- Kosher salt
- Fresh ground black pepper
Instructions
- Peel and slice the onion into thin slices.
- Melt butter in a skillet over medium-low heat.
- Add onions and season with salt and pepper to taste.
- Stir well to coat the onions in butter.
- Cook the onions for about 45 minutes, stirring occasionally, until they have reduced by about half and turned a dark brown translucent color.
- Butter one side of each slice of bread.
- On the opposite side of two slices, spread half of the crumbled Gorgonzola cheese.
- Divide the caramelized onions evenly between the two slices with Gorgonzola.
- Sprinkle the remaining Gorgonzola cheese on top of the onions and cover with the remaining bread slices.
- Cook the sandwiches at 325°F for four minutes per side, using a melting dome if available, to ensure thorough melting of the Gorgonzola.
- Serve hot and enjoy the rich, savory flavors!
