Greek Eggplant Rounds
Eggplants are rich in fibre and antioxidants and they’re a feature of the Mediterranean diet. Although any eggplant will work with this recipe, try selecting one that has a longer, slimmer shape as it will yield more consistent rounds when sliced.

- 2 teaspoons olive oil
- 1 long narrow eggplant, sliced into rounds
- ½ teaspoon salt
- ½ cup no-sugar-added napolitana sauce
- ½ cup fetta cheese crumbles
- 8 Kalamata olives pitted and halved
- 1 ½ tablespoons chopped fresh dill
Instructions
- Preheat air fryer at 180°C for 3 minutes.
- Rub olive oil over both sides of eggplant circles.
- Lay out slices on a large plate and season evenly with salt.
- Top evenly with napolitana sauce, fetta crumbles and olives.
- Place half of eggplant pizzas in ungreased air fryer basket.
- Cook for 5 minutes.
- Transfer back to plate.
- Repeat cooking with remaining pizzas.
- Garnish with chopped dill and serve warm.
