Greek Eggplant Rounds

Eggplants are rich in fibre and antioxidants and they’re a feature of the Mediterranean diet. Although any eggplant will work with this recipe, try selecting one that has a longer, slimmer shape as it will yield more consistent rounds when sliced.

Equipment

Ingredients

  • 2 teaspoons olive oil
  • 1 long narrow eggplant, sliced into rounds
  • ½ teaspoon salt
  • ½ cup no-sugar-added napolitana sauce
  • ½ cup fetta cheese crumbles
  • 8 Kalamata olives pitted and halved
  • 1 ½ tablespoons chopped fresh dill

Instructions

  • Preheat air fryer at 180°C for 3 minutes.
  • Rub olive oil over both sides of eggplant circles.
  • Lay out slices on a large plate and season evenly with salt.
  • Top evenly with napolitana sauce, fetta crumbles and olives.
  • Place half of eggplant pizzas in ungreased air fryer basket.
  • Cook for 5 minutes.
  • Transfer back to plate.
  • Repeat cooking with remaining pizzas.
  • Garnish with chopped dill and serve warm.
