Grilled Steak Tacos with Zesty Nectarine Salsa
Ingredients
- 2 ripe nectarines approximately 5 oz. each – halved, pitted, and sliced into thin wedges
- ⅓ cup small fresh cilantro sprigs
- ⅓ cup very thinly sliced red onion rounds
- 1 tablespoon thinly sliced jalapeño chile about 1/2 small chile
- 1 teaspoon lime zest plus 2 tablespoons juice from 1 lime
- 2 teaspoons olive oil
- 1 teaspoon chili powder
- ½ teaspoon ground hot paprika
- 2 strip steaks about 1 lb. each
- 8 corn tortillas
- ½ cup crumbled feta cheese about 1 1/2 oz.
Instructions
- Preheat your grill or grill pan to medium-high heat.
- In a medium bowl, combine the sliced nectarines, cilantro sprigs, thinly sliced red onion, jalapeño chile, lime zest, lime juice, and olive oil.
- Season the nectarine salsa with salt and pepper to taste.
- In a separate small bowl, whisk together the chili powder, ground hot paprika, 1 1/2 teaspoons salt, and 1 teaspoon pepper.
- Pat the steaks dry and rub the spice mixture all over them.
- Grill the steaks until grill marks form, and the steaks reach your desired doneness, approximately 5 minutes per side for medium-rare.
- Allow the steaks to rest for 5 minutes.
- While resting, grill the tortillas until they have a delightful char, about 30 seconds per side.
- Thinly slice the rested steaks.
- Assemble the tacos by dividing the sliced steaks, crumbled feta, and zesty nectarine salsa among the warm tortillas.
