Grilled Summer Squash and Tomatoes

Ingredients

Servings: 6 / Preparation: 5 min, Chilling: 30 min, Grilling: 10 min

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 garlic cloves minced
  • 4 medium-sized green tomatoes sliced into 1/4-inch-thick slices
  • 1 pound yellow squash sliced diagonally into 1/2-inch-thick slices

Instructions

  • In a shallow dish or freezer bag, combine the first 5 ingredients: olive oil, balsamic vinegar, salt, pepper, and minced garlic.
  • Add the sliced tomatoes and yellow squash to the mixture.
  • Cover or seal and chill for 30 minutes.
  • Remove the vegetables from the marinade, but be sure to reserve the marinade.
  • Grill the vegetables, covered with the grill lid, over medium-high heat (350°F to 400°F) for about 10 minutes or until they are tender, turning them occasionally.
  • After grilling, toss the grilled vegetables with the reserved marinade for added flavor.
