Grilled Vegetable Skewers

  • ¼ cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 garlic cloves minced
  • 1 tablespoon minced fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 large yellow squash cut into ¾-inch-thick slices
  • 1 large zucchini cut into ¾-inch-thick slices
  • 1 large green bell pepper cut into 1-inch squares
  • 1 large red bell pepper cut into 1-inch squares
  • 1 large yellow bell pepper cut into 1-inch squares
  • ¾ pound medium-size fresh mushrooms

Instructions

  • In a large bowl, combine the first 6 ingredients and stir well.
  • Add the squash, zucchini, bell peppers, and mushrooms to the bowl.
  • Toss well to coat the vegetables.
  • Cover and marinate in the refrigerator for 2 hours, tossing occasionally.
  • Drain the marinated vegetables and thread them alternately on skewers.
  • Grill the skewers, covered with the grill lid, over medium heat (300° to 350°) for about 12 minutes or until the vegetables are tender, turning them once.

    Note: If you’re using a grill basket, grill the vegetables in 2 batches in a single layer.
