Grilled Vegetable Skewers

- ¼ cup olive oil
- 2 tablespoons white wine vinegar
- 2 garlic cloves minced
- 1 tablespoon minced fresh thyme
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 large yellow squash cut into ¾-inch-thick slices
- 1 large zucchini cut into ¾-inch-thick slices
- 1 large green bell pepper cut into 1-inch squares
- 1 large red bell pepper cut into 1-inch squares
- 1 large yellow bell pepper cut into 1-inch squares
- ¾ pound medium-size fresh mushrooms
Instructions
- In a large bowl, combine the first 6 ingredients and stir well.
- Add the squash, zucchini, bell peppers, and mushrooms to the bowl.
- Toss well to coat the vegetables.
- Cover and marinate in the refrigerator for 2 hours, tossing occasionally.
- Drain the marinated vegetables and thread them alternately on skewers.
- Grill the skewers, covered with the grill lid, over medium heat (300° to 350°) for about 12 minutes or until the vegetables are tender, turning them once.
