Healthy Veggie and Turkey Meatballs
These healthy veggie and turkey meatballs are perfect for a nutritious side dish or main course. Packed with lean turkey and fresh vegetables, they are great for meal prep and can be enjoyed throughout the week.

Ingredients
- 2 pounds of lean ground turkey
- 1 cup panko Japanese breadcrumbs
- ¼ cup of carrots finely chopped
- ¼ cup of zucchini finely chopped
- ¼ cup of onion finely chopped
- 2 large eggs
- 2 tablespoons of Italian seasoning
- 1 tablespoon of sea salt
- 2 tablespoons of olive oil
- ¾ cup of chicken broth
Instructions
- In a large mixing bowl, combine the lean ground turkey, panko, finely chopped carrots, zucchini, onion, eggs, Italian seasoning, and sea salt.
- Mix thoroughly until well combined.
- Shape the mixture into 1-inch meatballs.
- Heat the olive oil in a large skillet over medium heat.
- Add the meatballs to the skillet and cook until browned, turning frequently, for about 7 minutes.
- Add ½ cup of chicken broth to the skillet, cover, and reduce the heat to low.
- Cook until the liquid is nearly absorbed, approximately 7 minutes.
- Add the remaining ¼ cup of chicken broth and increase the heat to medium.
- Cook uncovered until the liquid is fully absorbed.
- Serve the meatballs as a healthy side dish or main course, and enjoy!

Pair with a crisp Sauvignon Blanc or a light Pinot Grigio to complement the fresh vegetables and lean turkey.
