Hickory Nut Candy
Hickory nut trees once populated the fencerows and roadsides of rural eastern Pennsylvania. Their nuts were special treats to flavor cakes and candy.
Ingredients
Makes 64 1” squares
- 1½ cups sugar
- 1 cup sweet milk
- ⅓ cup hickory nuts chopped
- 1 tsp. vanilla
- 1 Tbsp. butter softened
Instructions
- Mix together sugar, milk, and nuts over medium heat, stirring only until sugar is dissolved.
- Bring to boil, without stirring further, until a soft ball is formed when small amount of mixture is dropped into cold water (236°).
- Remove from heat and add vanilla and butter.
- Beat together until fluffy.
- Spoon into 8” square baking pan.
- Chill.
- When firm, cut into 1” squares.
