Homemade Hearty Chicken Broth
Ingredients
- 1 roast chicken carcass with meat left on
- 225 g/8oz chicken wings
- 1 onion diced
- 1 leek diced
- 1 parsnip diced
- 6 whole black peppercorns
Instructions
Oven Prelude:
- Preheat the oven to 150°C/300°F/Gas mark 2.
- Place the roast chicken carcass with meat left on and chicken wings in a large, heavy saucepan.
Vegetable Ensemble:
- Add diced onion, leek, and parsnip to the saucepan.
- Bring the mixture to a boil.
- While the water is heating, add whole black peppercorns.
Slow Simmer:
- Once the stock has boiled, transfer it to an ovenproof dish.
- Cook in the oven for 2 hours.
Skim and Strain:
- Skim off any scum from the surface using a slotted spoon.
- Strain the rich stock, discarding everything except for the chicken.
Shred and Return:
- When cool enough to handle, take out the chicken carcass, shred the meat, and return it to the stock.
Serve with Comfort:
