Homemade Pork Tenderloin Tacos

Ingredients

  • 2 teaspoons oil
  • 1 pound pork tenderloin cubed
  • 1 teaspoon ground cumin
  • 2 cloves garlic minced
  • 1 cup green or red salsa
  • Optional: 1/2 cup fresh cilantro chopped
  • 8 10- inch corn tortillas warmed
  • Garnish:
  • Shredded lettuce diced tomatoes, sliced avocado, sliced black olives, sour cream, shredded Cheddar cheese

Instructions

  • In a skillet over medium-high heat, heat the oil.
  • Add the cubed pork and ground cumin, cooking until the pork is golden on all sides and is no longer pink in the center, about 8 to 10 minutes.
  • Add minced garlic and cook for an additional minute.
  • Drain any excess liquid.
  • Stir in the salsa and heat through.
  • If using cilantro, stir it in as well.
  • Using two forks, shred the pork in the skillet.
  • Fill the warmed tortillas with the pork mixture.
  • Garnish the Homemade Pork Tenderloin Tacos with shredded lettuce, diced tomatoes, sliced avocado, sliced black olives, sour cream, and shredded Cheddar cheese, as desired.
