  • 1 1-pound fillet chicken breast
  • Sea salt and ground black pepper to taste
  • 1 tablespoon olive oil
  • 4 eggs
  • ½ teaspoon cayenne pepper
  • ½ cup Mascarpone cream
  • ¼ cup freshly grated Asiago cheese

Instructions

  • Flatten the chicken breast with a meat mallet and season with salt and pepper.
  • Heat the olive oil in a frying pan over medium heat.
  • Cook the chicken for 10 to 12 minutes until done.
  • Slice into small strips and set aside.
  • In a mixing bowl, whisk together the eggs, cayenne pepper, and additional salt to taste.
  • Stir in the Mascarpone and Asiago cheese.
  • Add the cooked chicken strips to the egg mixture, stirring to combine.
  • Pour the mixture into a lightly greased pan and place it in the Air Fryer basket.
  • Preheat the Air Fryer to 355°F and cook for 10 minutes, flipping halfway through.
