Ingredients

  • 1 pound Butter
  • 8 ounces Jamaican Jerk Spice
  • ½ ounce Tabasco Sauce
  • 8 ounces Tomato Juice
  • 8 ounces Unbleached Flour
  • 5 pounds Chicken Wings or Drumettes fresh (not frozen)
  • Oil for Frying

Instructions

  • In a 2-quart saucepot, melt the butter over low heat.
  • Add the Jamaican Jerk Spice, Tabasco Sauce, and tomato juice.
  • Blend the mixture well and set it aside.
  • Rinse the chicken wings under cold running water and pat them dry with paper towels.
  • Dust the wings with flour.
  • In a heavy pot or skillet, heat about 2 inches of oil for frying.
  • Deep fry the wings until they are cooked through and have a crispy texture.
  • Place the cooked wings in the prepared sauce mixture, allowing them to marinate for a few minutes.
  • Drain off any excess liquid.
  • Serve the Jamaican Hot Wings immediately.
