Jamaican Jerk Chicken Wings

Ingredients

For the Marinade:

  • 1 Onion chopped
  • cup Scallions chopped
  • 2 Garlic cloves
  • ½ teaspoon Thyme crumbled
  • 1 ½ teaspoons Salt
  • 1 ½ teaspoons Ground allspice
  • ¼ teaspoon Nutmeg grated
  • ½ teaspoon Cinnamon
  • ¼ cup Jalapeno pepper minced
  • 1 teaspoon Black pepper
  • 6 drops Tabasco sauce
  • 2 tablespoons Soy sauce
  • ¼ cup Vegetable oil

To Add to Marinade:

  • 18 Chicken wings trimmed

Instructions

Prepare the Marinade:

  • In a food processor or blender, puree all marinade ingredients (onion, scallions, garlic, thyme, salt, allspice, nutmeg, cinnamon, jalapeno pepper, black pepper, Tabasco sauce, soy sauce, vegetable oil).

Marinate the Wings:

  • In a large shallow dish, arrange the chicken wings in a single layer.
  • Spoon the marinade over the wings, rubbing it in.
  • You can use rubber gloves for this step.
  • Let the wings marinate, covered and chilled, turning them once.
  • Marinate for at least 1 hour or, preferably, overnight.

Baking:

  • Preheat the oven to 450°F (230°C).
  • Arrange the marinated wings in one layer on an oiled rack set over a foil-lined roasting pan.
  • Spoon additional marinade over the wings.
  • Bake in the upper third of the preheated oven for 30-35 minutes or until the wings are cooked through.

Serve:

  • Once cooked, serve the Jamaican Jerk Chicken Wings hot.
  • Enjoy the flavorful and spicy kick of Jamaican jerk seasoning on these wings!
