Lentil And Canadian Bacon Soup

Ingredients

  • 1 bag dried lentils 2 cups, sorted, rinsed
  • 4 cups water
  • cups vegetable broth from 32-oz carton
  • 1 package 6 oz sliced Canadian bacon, coarsely chopped
  • 2 medium carrots cut into ½-inch pieces (1 cup)
  • 1 medium potato peeled, cut into ½-inch pieces (1 cup)
  • 1 medium onion chopped (½ cup)
  • 1 medium stalk celery cut into ½-inch pieces (½ cup)
  • 1 teaspoon dried thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Spray 3½- to 6-quart slow cooker with cooking spray.
  • In slow cooker, mix all ingredients.
  • Cover; cook on Low heat setting 8 to 9 hours (or High heat setting 3 to 5 hours) or until lentils are tender.
  • Stir well before serving.

Notes / Tips / Wine Advice:

Quick Variation:
Canadian bacon is a closer relative to ham than to regular bacon. It’s lean and fully cooked. If you prefer ham, use 1½ cups chopped cooked ham instead of the Canadian bacon.
