Lime Avocado Chicken

The creamy avocado of this recipe perfectly offsets the tangy lime.

Ingredients

  • 2 medium avocados pitted, peeled, mashed
  • 2 tablespoons dried cilantro
  • 1 teaspoon salt
  • 4 boneless chicken breasts whole
  • ½ onion sliced
  • 1 tablespoon garlic minced
  • cup lime juice

Instructions

  • Sprinkle the cilantro and salt into the avocado, using a fork to combine the ingredients.
  • Set aside.
  • Coat a skillet with nonstick cooking spray.
  • Cook the chicken until it is browned on both sides.
  • Add the onion and garlic, then pour in the lime juice.
  • Cover the skillet and allow the juice to simmer for 20 minutes, or until the chicken is cooked through.
  • Cover the chicken with the seasoned avocado.
