Ingredients
- 2 egg whites
- 2 TBSP unsweetened almond milk
- 2 TBSP sugar-free maple syrup
- 1 stevia packet
- ½ tsp vanilla extract
- 2 slices light bread 40 calories per slice or gluten-free bread
- 1 TBSP chopped pecans
Instructions
- Mix the Wet Ingredients: In a bowl, combine the egg whites, almond milk, sugar-free maple syrup, stevia, and vanilla extract.
- Prepare the Bread: Cut the bread into small cubes and soak them in the egg mixture for 1 minute until fully absorbed.
- Add Pecans: Stir in the chopped pecans.
- Cook the Mugcake: Spray a mug with nonstick spray and pour in the entire bread mixture.
- Microwave for 2 minutes.
- Serve: Let the mugcake cool slightly before enjoying.
