Marinated Chicken Kabobs

Equipment

  • medium bowl
  • refrigerator

Ingredients

  • 4 tsp fresh lemon juice
  • ½ tsp cayenne pepper
  • Freshly-ground black pepper to taste
  • 1 piece fresh ginger – abt 1″, peeled, minced
  • 1 tsp curry powder
  • 4 tsp olive oil
  • 2 whole boneless skinless chicken breasts halved, and cut into 1/4″ strips

Instructions

  • In a medium bowl, combine all ingredients except the chicken.
  • Add the chicken and let marinate overnight in the refrigerator.
  • Thread the chicken onto metal or wooden skewers.
  • Grill over medium heat until chicken is cooked throughout, about 15 minutes.
  • Transfer to a platter and serve.
