Marinated Green Bean-and-Okra Salad
Ingredients
Makes 8 servings / Prep: 15 min., Cook: 3 min., Chill: 3 hrs.
- 1½ pounds fresh green beans trimmed
- 1½ pounds small fresh okra
- ¾ cup olive oil
- 6 tablespoons white wine vinegar
- 1 tablespoon chopped fresh basil
- ½ teaspoon salt
- ½ teaspoon pepper
- ¼ teaspoon dry mustard
- ¼ cup crumbled feta cheese
Instructions
- Cook beans and okra in boiling water to cover 3 minutes.
- Plunge beans and okra into ice water to stop the cooking process; drain.
- Whisk together olive oil and next 5 ingredients; pour over beans and okra.
- Cover and chill 3 hours.
- Drain beans and okra; sprinkle with cheese before serving.
