Marinated Green Bean-and-Okra Salad

Ingredients

Makes 8 servings / Prep: 15 min., Cook: 3 min., Chill: 3 hrs.

  • pounds fresh green beans trimmed
  • pounds small fresh okra
  • ¾ cup olive oil
  • 6 tablespoons white wine vinegar
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon dry mustard
  • ¼ cup crumbled feta cheese

Instructions

  • Cook beans and okra in boiling water to cover 3 minutes.
  • Plunge beans and okra into ice water to stop the cooking process; drain.
  • Whisk together olive oil and next 5 ingredients; pour over beans and okra.
  • Cover and chill 3 hours.
  • Drain beans and okra; sprinkle with cheese before serving.
