Mashed Potato Filling
Almost a vegetable dish, this soft filling was likely invented by a cook who wanted to use up leftover mashed potatoes and stale bread. The final consistency of this traditional food is pudding-like.
Ingrediënten
- ½ cup butter
- ½ cup celery chopped
- 2 Tbsp. onion chopped
- 4 cups soft bread cubes
- ½ cup boiling water
- 3 eggs beaten
- 2 cups milk
- 1½ tsp. salt
- 2 cups mashed potatoes
Instructies
- Melt butter.
- Add celery and onion.
- Cook until tender.
- Pour over bread cubes and mix well.
- Add boiling water to bread and mix well.
- Add remaining ingredients, mixing well after each addition.
- The finished product should be very moist.
- Turn into 2 well greased casserole dishes.
- Bake at 350° for 45 minutes.
