Ingredients

  • 1 Tablespoon Salted Butter
  • 1 ½ Cups Frozen Chopped Onions
  • 3 Cubes Frozen Crushed Garlic
  • 1 Cup Frozen Chopped Green Bell Peppers
  • 1 Teaspoon Kosher Salt
  • 1 10-Ounce Bag Frozen Chopped Butternut Squash
  • 1 ½ Teaspoons Chili Powder
  • ½ Teaspoon Cumin
  • ¼ Teaspoon Cinnamon
  • 1 Cup Vegetable Broth
  • 1 10-Ounce Can Diced Tomatoes With Chilies, Undrained
  • 1 15-Ounce Can Black Beans, Drained And Rinsed
  • ¼ Cup Sour Cream

Instructions

  • Heat A Large Pot Over High Heat.
  • When Hot, Add Butter, Onions, Garlic, Bell Peppers, And Salt.
  • Sauté Until Vegetables Soften, About 3–4 Minutes.
  • Add Squash And Continue To Cook For Another 2 Minutes.
  • Add Chili Powder, Cumin, Cinnamon, Broth, Tomatoes With Juices, And Beans.
  • Bring To A Boil, Then Reduce Heat And Let Simmer For 5 Minutes.
  • Serve With A Dollop Of Sour Cream In Each Bowl.
