Mediterranean Jalapeño Poppers

Kalamata olives + fetta cheese + mint leaves = a traditional, tasty combination. Add a little pork and stuff it into jalapeño halves and you’ve just taken this bar food up a notch! And if you prefer more heat, instead of discarding the jalapeño seeds, simply fold them into the cheese mixture.

Ingredients

  • 1 tablespoon olive oil
  • 110 grams pork mince
  • 1 ½ tablespoons pitted and finely diced kalamata olives
  • 1 ½ tablespoons fetta cheese
  • 28 grams cream cheese room temperature
  • ½ teaspoon dried mint leaves
  • 6 large jalapeños sliced in half lengthwise and seeded

Instructions

  • In a medium frying pan, heat olive oil over medium-high heat 30 seconds.
  • Add pork and cook for 6 minutes until no longer pink.
  • Drain fat.
  • Preheat air fryer to 180°C for 3 minutes.
  • In a medium bowl, combine cooked pork, olives, fetta cheese, cream cheese and mint leaves.
  • Press pork mixture into peppers.
  • Place half of poppers in ungreased air fryer basket.
  • Cook for 6 minutes.
  • Transfer to a medium serving plate and repeat cooking with remaining poppers.
  • Serve warm.
