Mediterranean Romaine Salad

- 1 large head of romaine lettuce chopped
- 2 tomatoes chopped
- 1 cucumber chopped
- ½ green pepper chopped
- 5 scallions chopped
- 1 cup crumbled tofu or veggie cheese feta-style
- 12-16 black olives pitted
- Balsamic Salad Dressing store-bought or homemade
Instructions
- In a large mixing bowl, combine the chopped romaine lettuce, tomatoes, cucumber, green pepper, scallions, crumbled tofu or veggie cheese, and black olives.
- Toss all the ingredients together until well mixed.
- Transfer the salad to a serving bowl.
- Serve the Mediterranean Romaine Salad with Balsamic Salad Dressing on the side.
