For the Veggie Combo:

  • 2 cups potatoes cut into large chunks
  • 1 cup mushrooms sliced
  • 1 cup tomatoes sliced
  • 1 cup zucchini sliced
  • 1 cup cauliflower sliced
  • 1 cup broccoli florets

For the Lemon Herb Dressing:

  • ½ cup lemon juice
  • ¼ cup minced onion
  • 2 garlic cloves minced
  • 1 teaspoon dried oregano
  • 1 teaspoon Bragg Liquid Aminos or soy sauce
  • ½ cup olive oil
  • Salt and pepper to taste

Instructions

  • Steam the potatoes in a steamer until tender, about 10-12 minutes.
  • Remove from heat and let cool slightly.
  • In a large bowl, combine the steamed potatoes with the sliced mushrooms, tomatoes, zucchini, cauliflower, and broccoli florets.
  • In a separate small bowl, whisk together the lemon juice, minced onion, minced garlic, dried oregano, Bragg Liquid Aminos, and olive oil to make the dressing.
  • Season with salt and pepper to taste.
  • Pour the lemon herb dressing over the mixed vegetables in the large bowl.
  • Gently toss until all the vegetables are evenly coated with the dressing.
  • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the vegetables to chill.
  • Before serving, give the veggie combo a gentle stir.
  • Serve chilled as a refreshing main course or side dish.
