Mediterranean Veggie Medley with Lemon Herb Dressing

Ingredients
For the Veggie Combo:
- 2 cups potatoes cut into large chunks
- 1 cup mushrooms sliced
- 1 cup tomatoes sliced
- 1 cup zucchini sliced
- 1 cup cauliflower sliced
- 1 cup broccoli florets
For the Lemon Herb Dressing:
- ½ cup lemon juice
- ¼ cup minced onion
- 2 garlic cloves minced
- 1 teaspoon dried oregano
- 1 teaspoon Bragg Liquid Aminos or soy sauce
- ½ cup olive oil
- Salt and pepper to taste
Instructions
- Steam the potatoes in a steamer until tender, about 10-12 minutes.
- Remove from heat and let cool slightly.
- In a large bowl, combine the steamed potatoes with the sliced mushrooms, tomatoes, zucchini, cauliflower, and broccoli florets.
- In a separate small bowl, whisk together the lemon juice, minced onion, minced garlic, dried oregano, Bragg Liquid Aminos, and olive oil to make the dressing.
- Season with salt and pepper to taste.
- Pour the lemon herb dressing over the mixed vegetables in the large bowl.
- Gently toss until all the vegetables are evenly coated with the dressing.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld and the vegetables to chill.
- Before serving, give the veggie combo a gentle stir.
- Serve chilled as a refreshing main course or side dish.
