Melty Mushroom Delight
Ingredients
- 8 large flat mushrooms wiped clean
- 2 tablespoons olive oil
- 250 g/9oz Taleggio or Brie cheese thickly sliced
- 1 bunch of fresh lemon thyme leaves only
- Salt and freshly ground black pepper
Instructions
- Preheat the oven to 200°C/400°F/Gas mark 6.
- Trim the stalks from the mushrooms and place them, rounded cap side down, in a medium roasting dish.
- Season with salt and pepper.
- Drizzle the olive oil over the mushrooms.
- Place the cheese slices on top of the mushrooms, covering them evenly.
- Sprinkle the lemon thyme leaves over the cheese.
- Bake in the preheated oven for 20–25 minutes until the cheese has melted and is bubbly.
- Serve the melty mushroom delight hot, straight from the oven.
