Mushroom and Onion Pizza Rounds

Serve these low-carb pizza rounds alongside a fresh mixed green salad for a tummy full of healthy ingredients. If you don’t eat dairy, substitute with vegan mozzarella which you can find at your local supermarket.

Equipment

Ingredients

  • 2 teaspoons plus 2 tablespoons olive oil divided
  • ¼ cup peeled and small-diced yellow onion
  • ½ cup small-diced baby Swiss brown mushrooms
  • ½ cup no-sugar-added napolitana sauce
  • 1 small eggplant sliced into circles
  • 1 teaspoon salt
  • 1 cup shredded mozzarella
  • ¼ cup chopped fresh basil

Instructions

  • In a medium frying pan, heat 2 teaspoons olive oil over medium heat for 30 seconds.
  • Add onion and mushrooms.
  • Cook for 4 minutes until onion is translucent.
  • Add napolitana sauce and stir.
  • Remove from heat.
  • Preheat air fryer at 190°C for 3 minutes.
  • Rub remaining 2 tablespoons olive oil over both sides of eggplant circles.
  • Lay out slices on a large plate and season evenly with salt.
  • Top evenly with sauce mixture and shredded mozzarella.
  • Place half of eggplant pizzas in ungreased air fryer basket.
  • Cook for 5 minutes.
  • Transfer back to plate.
  • Repeat cooking with remaining pizzas.
  • Garnish pizzas with chopped basil and serve warm.
