Mushroom Tartlets

Tartaletas de Champiñón
These delightful mushroom tartlets are best garnished with pieces of pickles and pimientos. It's important not to prepare this tapa more than 1 hour in advance to avoid excess liquid from the mushrooms that can thin the sauce.

MAKES 20 TAPAS:

  • 5 tablespoons mayonnaise mayonesa, to taste
  • 1 garlic clove mashed using a garlic press or mortar
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 1 teaspoon fresh lemon juice
  • Salt
  • Freshly ground black pepper
  • ¼ pound mushrooms rinsed, trimmed, and finely chopped
  • 20 puff pastry tartlet shells homemade or storebought
  • Pickles and pimientos cut into small pieces, for garnish

Instructions

  • In a small bowl, combine the mayonnaise, mashed garlic, chopped parsley, fresh lemon juice, salt, and freshly ground black pepper.
  • Fold in the finely chopped mushrooms and refrigerate the mixture for 1 hour.
  • Fill each tartlet shell with the mushroom mixture, and decorate the tops with pieces of pickles and pimientos.
  • Serve and enjoy your mushroom tartlets!
