Mushroom Tartlets
Tartaletas de ChampiñónThese delightful mushroom tartlets are best garnished with pieces of pickles and pimientos. It's important not to prepare this tapa more than 1 hour in advance to avoid excess liquid from the mushrooms that can thin the sauce.

MAKES 20 TAPAS:
- 5 tablespoons mayonnaise mayonesa, to taste
- 1 garlic clove mashed using a garlic press or mortar
- 1 tablespoon finely chopped fresh flat-leaf parsley
- 1 teaspoon fresh lemon juice
- Salt
- Freshly ground black pepper
- ¼ pound mushrooms rinsed, trimmed, and finely chopped
- 20 puff pastry tartlet shells homemade or storebought
- Pickles and pimientos cut into small pieces, for garnish
Instructions
- In a small bowl, combine the mayonnaise, mashed garlic, chopped parsley, fresh lemon juice, salt, and freshly ground black pepper.
- Fold in the finely chopped mushrooms and refrigerate the mixture for 1 hour.
- Fill each tartlet shell with the mushroom mixture, and decorate the tops with pieces of pickles and pimientos.
- Serve and enjoy your mushroom tartlets!
