Naranja Agria

Bitter Orange Juice Substitute Bitter oranges (naranja agria), sometimes called Seville oranges, are used a great deal in Yucatán cooking. The juice is used in the seasoning pastes (recados) of the region, in fresh salsas, and to flavor fish and other meats. This is a substitute for the real thing if Seville oranges are not available

Ingredients

Makes 3⁄4 cup

  • 1 ⁄2 cup fresh orange juice
  • 1 ⁄4 cup fresh grapefruit juice
  • 1 tablespoon fresh lime juice

Instructions

  • Mix all of the juices together in a jar, cover, and store in the refrigerator.
  • The juice is best used fresh or within 2 days.
