New Year’s Day Soup

Ingredients

  • Serves 6 to 8 / Preparation Time: 20 minutes Cooking Time: 1 hour 30 minutes
  • 1 cup diced smoked lean ham
  • 2 celery ribs chopped
  • 1 medium onion chopped
  • 2 carrots chopped
  • 2 garlic cloves minced
  • 2 15-ounce cans black-eyed peas, undrained
  • 2 14½-ounce cans low-sodium fat-free chicken broth
  • 2 14½-ounce cans stewed tomatoes, undrained
  • 1 14½-ounce can diced tomatoes, undrained
  • 1 8-ounce can tomato sauce
  • cups chopped fresh spinach
  • ½ cup chopped fresh parsley
  • ½ teaspoon pepper
  • Chopped fresh spinach optional

Instructions

  • In a Dutch oven, sauté the diced smoked lean ham, celery, onion, carrots, and minced garlic over medium heat until the vegetables are tender.
  • Stir in the black-eyed peas, low-sodium fat-free chicken broth, stewed tomatoes, diced tomatoes, tomato sauce, and pepper.
  • Bring the mixture to a boil, then cover, reduce the heat, and simmer for 1 hour and 30 minutes.
  • Stir in 1½ cups of chopped spinach, parsley, and pepper.
  • Serve with additional chopped fresh spinach if desired.
