In a Dutch oven, sauté the diced smoked lean ham, celery, onion, carrots, and minced garlic over medium heat until the vegetables are tender.
Stir in the black-eyed peas, low-sodium fat-free chicken broth, stewed tomatoes, diced tomatoes, tomato sauce, and pepper.
Bring the mixture to a boil, then cover, reduce the heat, and simmer for 1 hour and 30 minutes.
Stir in 1½ cups of chopped spinach, parsley, and pepper.
Serve with additional chopped fresh spinach if desired.
