New Year’s Day Soup

- 1 cup diced smoked lean ham
- 2 celery ribs chopped
- 1 medium onion chopped
- 2 carrots chopped
- 2 garlic cloves minced
- 2 15-ounce cans black-eyed peas, undrained
- 2 14½-ounce cans low-sodium fat-free chicken broth
- 2 14½-ounce cans stewed tomatoes, undrained
- 1 14½-ounce can diced tomatoes, undrained
- 1 8-ounce can tomato sauce
- 1½ cups chopped fresh spinach
- ½ cup chopped fresh parsley
- ½ teaspoon pepper
- Chopped fresh spinach optional
Instructions
- In a Dutch oven, sauté the diced smoked lean ham, celery, onion, carrots, and minced garlic over medium heat until the vegetables are tender.
- Stir in the black-eyed peas, low-sodium fat-free chicken broth, stewed tomatoes, diced tomatoes, tomato sauce, and pepper.
- Bring the mixture to a boil, then cover, reduce the heat, and simmer for 1 hour and 30 minutes.
- Stir in 1½ cups of chopped spinach, parsley, and pepper.
- Serve with additional chopped fresh spinach if desired.
