Nutty Mushroom Asparagus

This light dish serves as a great side addition to any heavy main course. It can also be used as an appetizer.

Ingredients

  • 1 Cup Trimmed Asparagus Spears
  • 1 Cup Sliced Mushrooms
  • 2 Tablespoons Roasted Hazelnuts
  • 2 Tablespoons Olive Oil
  • 2 Teaspoons White Wine
  • ½ Teaspoon Thyme
  • Salt and Pepper to Taste

Instructions

  • Coat asparagus with olive oil, salt and pepper and bake in a pre-heated oven at 425 degrees for about 10 minutes.
  • While it is baking, heat 1 tablespoon olive oil in a skillet and slightly brown the mushrooms.
  • Add in the hazelnuts and spices.
  • Mix in the baked asparagus and toss to coat evenly.
  • Serve warm.
