Ingredients

  • 1 cup creamy peanut butter
  • 2 cups cooked brown rice
  • 1 small onion finely chopped
  • teaspoon salt
  • teaspoon ground sage
  • Milk or water as needed

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the peanut butter with enough milk or water to achieve a thin cream-like consistency.
  • Add the chopped onion, cooked brown rice, salt, and ground sage to the peanut butter mixture.
  • Stir well to combine.
  • Transfer the mixture into a greased baking dish, spreading it out evenly.
  • Bake in the preheated oven for 30 to 40 minutes, or until the top is golden brown and the edges are slightly crispy.
  • Once baked, remove from the oven and let it cool for a few minutes before serving.
  • Serve as a delicious side dish or as a filling for stuffed green peppers, as suggested.
