Orange Ginger Pork Lettuce Wraps

This sweet and spicypork is a perfect complement to healthy, low-carb lettuce wraps. If you haveleftovers, try serving them over a bed of riced cauliflower or even atop amixed green salad.

Equipment

Ingredients

  • ¾ tablespoon arrowroot flour
  • ¾ tablespoon water
  • ¾ tablespoon apple cider vinegar
  • 1 ½ tablespoons sugar-reduced orange marmalade
  • 1 teaspoon pulp-free orange juice
  • 2 teaspoons sesame oil
  • teaspoon cayenne pepper
  • ¼ teaspoon ground ginger
  • 1 450 gram boneless pork loin, cut into 3cm cubes
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground white pepper
  • 8 iceberg lettuce leaves

Instructions

  • In a small bowl, create a slurry by whisking together arrowroot flour and water.
  • Set aside.
  • In a small saucepan, combine apple cider vinegar, orange marmalade, orange juice, sesame oil, cayenne pepper and ginger over medium heat.
  • Cook for 3 minutes, stirring continuously.
  • Whisk in arrowroot slurry and heat for another minute.
  • Remove pan from heat and allow to thicken for 3 minutes.
  • Preheat air fryer at 180°C for 3 minutes.
  • Season pork with salt and white pepper.
  • Add half of pork to air fryer basket lightly greased with olive oil.
  • Cook for 4 minutes.
  • Shake gently.
  • Cook for an additional 4 minutes.
  • Using a meat thermometer, ensure internal temperature is at least 62°C.
  • Transfer cooked pork to sauce.
  • Repeat cooking with remaining pork, then add to sauce and toss.
  • Serve warm in lettuce leaves.

What Is A Slurry?

A slurry is a starchy liquid used to thicken sauces, gravies or soups. It’s usually made with cornstarch, flour, potato starch or arrowroot. Once mixed with water the slurry can be added directly to the hot liquid and bought to a simmer to thicken.
