Pesto Chicken Shells

Ingredients

  • 1 package jumbo pasta shells
  • 1 tablespoon olive oil
  • 2 pounds chicken breast cubed
  • ¼ cup pesto
  • 1 cup Mozzarella
  • 1 cup Parmesan
  • 1 cup chicken broth

Instructions

  • Boil the pasta shells.
  • Drain several minutes before the pasta is done and set aside.
  • Heat the oil in a pan over medium-high heat.
  • Brown the chicken.
  • Remove from heat and set aside.
  • In a bowl, mix the pesto, cheese, and chicken.
  • Stuff the mixture into the pasta shells.
  • Transfer the stuffed shells into a greased slow cooker insert.
  • Pour the broth over the shells.
  • Cover and cook on low for four hours.
