Pork Cutlets with a Crunchy Twist

Ingredients
- 1 cup water
- 1 cup red wine
- 1 tablespoon sea salt
- 2 pork cutlets
- ½ cup all-purpose flour
- 1 teaspoon shallot powder
- ½ teaspoon porcini powder
- Sea salt and ground black pepper to taste
- 1 egg
- ¼ cup yogurt
- 1 teaspoon brown mustard
- 1 cup tortilla chips crushed
Instructions
- In a large ceramic dish, combine water, wine, and salt.
- Add the pork cutlets and refrigerate for 1 hour.
- In a shallow bowl, mix flour, shallot powder, porcini powder, salt, and black pepper.
- In another bowl, whisk eggs with yogurt and mustard.
- In a third bowl, place the crushed tortilla chips.
- Dip pork cutlets in the flour mixture, then in the egg mixture, and finally in the crushed tortilla chips.
- Spritz the cooking basket with cooking oil.
- Place breaded pork cutlets in the basket and cook at 395°F for 10 minutes.
- Flip the cutlets and cook for an additional 5 minutes.
- Serve warm.
