Ingredients

  • 1 cup water
  • 1 cup red wine
  • 1 tablespoon sea salt
  • 2 pork cutlets
  • ½ cup all-purpose flour
  • 1 teaspoon shallot powder
  • ½ teaspoon porcini powder
  • Sea salt and ground black pepper to taste
  • 1 egg
  • ¼ cup yogurt
  • 1 teaspoon brown mustard
  • 1 cup tortilla chips crushed

Instructions

  • In a large ceramic dish, combine water, wine, and salt.
  • Add the pork cutlets and refrigerate for 1 hour.
  • In a shallow bowl, mix flour, shallot powder, porcini powder, salt, and black pepper.
  • In another bowl, whisk eggs with yogurt and mustard.
  • In a third bowl, place the crushed tortilla chips.
  • Dip pork cutlets in the flour mixture, then in the egg mixture, and finally in the crushed tortilla chips.
  • Spritz the cooking basket with cooking oil.
  • Place breaded pork cutlets in the basket and cook at 395°F for 10 minutes.
  • Flip the cutlets and cook for an additional 5 minutes.
  • Serve warm.
