Potato Cakes

Leftover mashed potatoes never go to waste. In fact, some family members wish there were more of them—more often—so that potato cakes were prepared more frequently. Potato cakes are at their best if they are eaten immediately after leaving the frying pan.

Ingredients

  • 2 cups leftover mashed potatoes
  • 1 egg beaten
  • 1 Tbsp. flour or more if the potatoes are thin
  • 2 Tbsp. cream or less if the potatoes are thin
  • 1 Tbsp. onion chopped fine
  • 2 –3 Tbsp. shortening

Instructions

  • Mix together all ingredients except shortening.
  • Heat shortening.
  • Drop potatoes by tablespoons into shortening and brown on both sides.
