Ingredients

  • ½ cup 72 g vital wheat gluten flour
  • ¼ cup 30 g nutritional yeast
  • 2 tablespoons 20 g brown rice flour
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon fine sea salt
  • ¾ cup 180 ml unsweetened soy or other nondairy milk
  • 2 tablespoons 32 g tahini

Instructions

  • Preheat oven to 375°F (190°C).
  • Lightly coat 6 muffin cups with nonstick cooking spray.
  • In a mixing bowl, combine wheat gluten, nutritional yeast, rice flour, garlic powder, Italian seasoning, and sea salt.
  • Stir in nondairy milk and tahini until a smooth batter forms.
  • Incorporate optional add-ins, such as olives, nuts, or roasted red pepper, if desired.
  • Divide the batter evenly among the muffin cups.
  • Bake for 20 minutes, or until the seitan bites are light golden brown and firm.
