Ingredients
- ½ cup 72 g vital wheat gluten flour
- ¼ cup 30 g nutritional yeast
- 2 tablespoons 20 g brown rice flour
- ½ teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ teaspoon fine sea salt
- ¾ cup 180 ml unsweetened soy or other nondairy milk
- 2 tablespoons 32 g tahini
Instructions
- Preheat oven to 375°F (190°C).
- Lightly coat 6 muffin cups with nonstick cooking spray.
- In a mixing bowl, combine wheat gluten, nutritional yeast, rice flour, garlic powder, Italian seasoning, and sea salt.
- Stir in nondairy milk and tahini until a smooth batter forms.
- Incorporate optional add-ins, such as olives, nuts, or roasted red pepper, if desired.
- Divide the batter evenly among the muffin cups.
- Bake for 20 minutes, or until the seitan bites are light golden brown and firm.
