Ingredients
- 1½ cups finely chopped red onion
- 2 teaspoons lemon zest
- ¾ cup white vinegar
- 3 cups white sugar
- 1 3-ounce liquid pectin
Instructions
- In a large saucepan, combine all ingredients except pectin.
- Bring to a full rolling boil, stirring often.
- Stir in pectin and boil hard for 1 minute, stirring constantly.
- Ladle into clean jars and process for 10 minutes in boiling-water bath.
