Red Onion Jelly

Ingredients

  • cups finely chopped red onion
  • 2 teaspoons lemon zest
  • ¾ cup white vinegar
  • 3 cups white sugar
  • 1 3-ounce liquid pectin

Instructions

  • In a large saucepan, combine all ingredients except pectin.
  • Bring to a full rolling boil, stirring often.
  • Stir in pectin and boil hard for 1 minute, stirring constantly.
  • Ladle into clean jars and process for 10 minutes in boiling-water bath.
