Red Potato and Asparagus Salad
Here is another healthy but filling salad recipe for all those who are trying to eat healthy while trying to lose weight.

- 1 Cup Trimmed and Cooked Asparagus Spears
- ½ Cup Boiled and Chopped Red Potatoes
- ⅓ Cup Chopped Chives
- ⅓ Cup Lemon Juice
- ¼ Cup Olive Oil
- Salt and Pepper to Taste
- Cayenne Pepper to Taste
Instructies
- In a large bowl, toss together asparagus, potatoes and chives.
- In a small bowl, whisk together, olive oil, lemon juice and spices.
- Drizzle the dressing on top of the mixture that we prepared in Step 1.
- Mix so that everything is coated evenly.
- Refrigerate for 1 hour to allow the flavours to sink in.
