Red Potato and Asparagus Salad

Here is another healthy but filling salad recipe for all those who are trying to eat healthy while trying to lose weight.

Ingredients

  • 1 Cup Trimmed and Cooked Asparagus Spears
  • ½ Cup Boiled and Chopped Red Potatoes
  • Cup Chopped Chives
  • Cup Lemon Juice
  • ¼ Cup Olive Oil
  • Salt and Pepper to Taste
  • Cayenne Pepper to Taste

Instructions

  • In a large bowl, toss together asparagus, potatoes and chives.
  • In a small bowl, whisk together, olive oil, lemon juice and spices.
  • Drizzle the dressing on top of the mixture that we prepared in Step 1.
  • Mix so that everything is coated evenly.
  • Refrigerate for 1 hour to allow the flavours to sink in.
