Ingredients

For the Swiss Chard:

  • 1 pound Swiss chard thoroughly washed and tough stems removed, roughly chopped
  • Salt to taste
  • 2 tablespoons olive oil

For the Homemade Croutons:

  • 4 slices of whole-grain bread cut into cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • Salt to taste

Instructions

  • Prepare the Swiss Chard: In a large pot, bring water to a boil.
  • Add salt and the chopped Swiss chard.
  • Cook for about 5-7 minutes until the chard is just tender.
  • Drain well, pressing to remove excess liquid.
  • Make the Homemade Croutons: Heat 2 tablespoons of olive oil in a skillet over medium heat.
  • Add the bread cubes and toss until they start to turn golden and crispy, about 8-10 minutes.
  • Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Sprinkle smoked paprika and salt over the croutons, toss well, and remove from heat.
  • Combine and Serve: In a serving dish, arrange the cooked Swiss chard.
  • Drizzle the chard with 2 tablespoons of olive oil.
  • Top the chard with the prepared homemade croutons.
