Roasted Asparagus

Just like grilling, roasting is another very healthy method of cooking as it uses minimal oil. So it was obvious that a recipe of roasted asparagus would have to be included.

Ingredients

  • 1 Cup Trimmed Asparagus Spears
  • Cup Sliced Shallots
  • ½ Cup Cherry Tomatoes
  • 1 ½ Teaspoon Fresh Chopped Thyme
  • 1 Teaspoon Olive oil
  • Salt and Pepper to Taste

Instructions

  • In a small bowl, mix together olive oil, thyme, salt and pepper.
  • In a pre-greases baking dish, layer the asparagus, shallots and tomatoes.
  • Pour the dressing mixture on top.
  • Bake for 6 minutes at 400 degrees or until tender but crispy.
