Romaine and Zucchini Salad

- 4 cups shredded romaine lettuce
- 2 small zucchini cut crosswise into thin rounds
- 1 large tomato chopped
- 1 tablespoon chopped flat-leaf parsley
- 2 tablespoons olive oil
- 2 teaspoons white wine vinegar
- ½ teaspoon salt or to taste
- ⅛ teaspoon freshly ground pepper or to taste
- 2 to 3 tablespoons crumbled queso fresco fresh Mexican cheese
Instructies
- In a large salad bowl, combine romaine, zucchini, tomato, and parsley.
- In a small bowl whisk together the oil, vinegar, salt, and pepper.
- Pour over the salad and toss gently to coat.
- Serve on individual salad plates with crumbled cheese on top.
