Savory Turkey Tenderloin Sandwiches

Ingredients
- 1 pound turkey tenderloins
- 1 tablespoon Dijon-style mustard
- 1 tablespoon olive oil
- Sea salt and ground black pepper to taste
- 1 teaspoon Italian seasoning mix
- ¼ cup all-purpose flour
- 1 cup turkey stock
- 8 slices sourdough toasted
- 4 tablespoons tomato ketchup
- 4 tablespoons mayonnaise
- 4 pickles sliced
Instructions
- Rub the turkey tenderloins with mustard and olive oil.
- Season with salt, black pepper, and Italian seasoning mix.
- Cook the turkey tenderloins in the Air Fryer at 350°F for 30 minutes, flipping halfway through.
- Let them rest for 5 to 7 minutes before slicing.
- To make the gravy, place the drippings from the roasted turkey in a saucepan.
- Add 1/8 cup flour and 1/2 cup turkey stock, whisking until smooth.
- Once golden brown, add the remaining stock and flour.
- Season with salt to taste and simmer over medium heat, stirring constantly for 6 to 7 minutes.
- Assemble each sandwich with turkey slices, gravy, tomato ketchup, mayonnaise, and pickles on toasted sourdough.
