Scotch Eggs

Although this treat istraditionally enjoyed as pub food, breakfast is a perfect time of day for it.C’mon: sausage and eggs — that are portable! If you prefer a runnier yolk,under cook the hard-boiled eggs by a few minutes before preparing the dish.

Equipment

Ingredients

  • 450 grams pork sausage removed from casing
  • 2 teaspoons Dijon mustard
  • 2 teaspoons peeled and grated brown onion
  • ¾ tablespoon chopped fresh chives
  • ¾ tablespoon chopped fresh parsley
  • teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 4 large hard-boiled eggs peeled
  • 1 large egg beaten
  • 1 cup crushed pork rinds
  • 2 teaspoons olive oil

Instructions

  • Preheat air fryer at 180°C for 3 minutes.
  • Combine sausage, mustard, onion, chives, parsley, nutmeg, salt and pepper in a large bowl.
  • Separate mixture into four even balls.
  • Form sausage balls evenly around hard-boiled eggs, then dip in beaten egg and cover in pork rinds.
  • Place sausage balls in air fryer basket lightly greased with olive oil.
  • Cook for 7 minutes, then gently turn and brush lightly with olive oil.
  • Cook for an additional 7 minutes.
  • Transfer to a large serving plate and serve warm.
