Ingredients

  • 1 lb. whole okra
  • 1 tbsp. mustard powder mixed with equal parts water to form a paste (adjust according to taste)
  • 1 tsp. turmeric powder
  • 1 tsp. chili powder
  • 1 tsp. mustard seeds
  • 1 tsp. salt or to taste
  • 2 tbsp. oil

Instructions

  • Heat oil in a non-stick frying pan or skillet over low heat.
  • Add mustard seeds to the hot oil and fry for about 30 seconds until they start to splutter.
  • Stir in the mustard paste and cook for another minute, ensuring it doesn’t burn.
  • Add whole okra to the pan and toss to coat with the mustard mixture.
  • Sprinkle turmeric powder, chili powder, and salt over the okra.
  • Mix well.
  • Cook the okra on medium-low heat for 10 to 15 minutes, stirring occasionally, until tender but still crisp.
  • Once the okra is cooked to your liking, remove the pan from the heat.
  • Serve hot as a main course, accompanied by rice or Indian flatbread.

While traditionally not paired with wine, you can enjoy this Okra & Mustard (Shorshe Dharosh) with a light and refreshing Indian lager beer for a classic accompaniment. Alternatively, a glass of mango lassi can provide a cooling contrast to the spices.
