Spanish-Style Chicken Drumsticks with Golden Potatoes

- 2 tablespoons butter melted
- 4 chicken drumsticks bone-in
- 1 pound Yukon Gold potatoes peeled and diced
- 1 lemon 1/2 juiced, 1/2 cut into wedges
- 1 teaspoon fresh garlic minced
- 1 teaspoon dried rosemary crushed
- 1 teaspoon dried thyme crushed
- 1 teaspoon cayenne pepper
- ⅓ teaspoon freshly ground black pepper
- Kosher salt to taste
- 2 tablespoons sherry
Instructions
- Preheat your Air Fryer to 370°F.
- Grease a baking pan with melted butter and arrange the chicken drumsticks in it.
- Bake in the preheated Air Fryer for 8 minutes.
- Add the diced potatoes to the baking pan and drizzle the chicken and potatoes with lemon juice.
- Sprinkle garlic, rosemary, thyme, cayenne pepper, black pepper, and salt over the top.
- Increase the temperature to 400°F and cook for an additional 12 minutes, shaking the basket once or twice.
- Remove from the Air Fryer and sprinkle sherry over the chicken and potatoes.
- Serve with lemon wedges and enjoy!
