Cook the spelled grains in boiling salted water for 10 minutes.
Cover and leave to soak over a low flame for 30–40 minutes.
Peel the lower third of the asparagus and cut off the woody ends.
Cook the asparagus in boiling salted water for 5 minutes.
Wash the sugar snap peas and add to the asparagus at the last minute.
Cut the asparagus and snow peas into bite-sized pieces.
Wash the spinach and shake dry.
Wash the dill and pluck the tips.
Mix the orange and lemon juice with the oils, salt and pepper.
Let the spelled cool for 10 minutes and mix carefully with the salad ingredients and vinaigrette in a large bowl.
Crumble the feta, cut the cress from the bed and sprinkle both over the salad.
